Ingredients
- 1 Real Good burrito tortilla
- 2 3/4 oz (78 g) top sirloin steak
- 1 large organic egg
- 2 slices beef bacon (optional)
- 8 frozen tater tots (about 2 3/4 oz / 76 g), air fried
- 1 oz (28 g) low-moisture mozzarella, shredded
- Avocado oil spray; salt and pepper; chopped parsley to finish
- Red salsa or hot sauce for dipping (not counted in the macros) (optional)
How to make it
- Prep everythingTake out the 2 3/4 oz (78 g) of top sirloin and pat it dry with a paper towel, then season both sides with salt and pepper. Crack the egg into a small bowl and beat it with a fork. Shred the 1 oz (28 g) of mozzarella if it is not already shredded, chop a little parsley, and set out the tortilla and the 2 slices of beef bacon.
- Air fry the totsPut the 8 frozen tater tots in the air fryer basket in a single layer, no oil needed. Air fry at 400°F (204°C) for 10 to 12 minutes, shaking the basket halfway, until deep golden and crunchy. They cook while you do the bacon and steak, so start them first.
- Crisp the baconLay the 2 slices of beef bacon in a large 12-inch (30 cm) nonstick or cast iron skillet over medium heat. Cook 3 to 4 minutes, flipping once, until crisp and browned. Move it to a cutting board and chop it into small pieces, leaving the pan on the heat.
- Sear the steakTurn the heat up to medium-high, give the same pan a light spray of avocado oil, and add the steak. Sear it (cook hard and fast without moving it) 2 to 3 minutes a side, until a dark brown crust forms and it reads 130°F (54°C) inside for medium-rare. Rest it 3 minutes on the board, then chop into small bite-size pieces.
- Scramble the eggTurn the heat down to medium-low and pour the beaten egg into the pan. Stir slowly with a spatula for about 1 minute, until it is just set but still soft and a little shiny. Slide it out onto a plate.
- Fill and rollWarm the tortilla in the microwave for 10 to 15 seconds or in the dry pan for a few seconds a side, so it bends without cracking. Lay the mozzarella down the middle first, then add the egg, steak, bacon and tots on top. Press the tots down a little so the burrito rolls tight. Fold in the two sides, then roll it up tightly from the bottom.
- Crisp and servePlace the burrito seam side down in the skillet over medium heat and cook 1 to 2 minutes a side, until the tortilla is golden and crisp and the cheese has melted. Cut it in half, sprinkle with parsley and serve with red salsa or hot sauce for dipping.
