Ingredients

  • 4 large pasture-raised eggs (Vital Farms)
  • 1 scoop (about 30 g) whey protein isolate, vanilla or unflavored
  • 3 1/2 oz (100 g) wild blueberries, about 3/4 cup (frozen works, no need to thaw)
  • 1/4 cup (about 2 oz / 60 g) Philadelphia Whipped Mixed Berry cream cheese (optional)
  • 1 tbsp wildflower honey (optional)
  • Avocado oil spray; pinch of cinnamon and salt

How to make it

  1. Prep everythingCrack the 4 eggs into a blender or a medium bowl. Measure out 1 scoop (about 30 g) of whey protein isolate, the 3 1/2 oz (100 g) of wild blueberries (leave frozen ones frozen), the 1/4 cup (60 g) of berry cream cheese and the 1 tbsp of honey. Set out the avocado oil spray, a pinch of cinnamon and a pinch of salt.
  2. Make the batterAdd the whey, cinnamon and salt to the eggs. Blend or whisk hard for about 30 seconds, until completely smooth with no dry clumps of powder. Let it sit 2 minutes so it thickens slightly.
  3. Heat the panSet a 10-inch (25 cm) nonstick skillet over medium-low heat for about 2 minutes. Give it a light spray of avocado oil. It is ready when a drop of batter sizzles gently, not loudly.
  4. Cook the first pancakePour in about one third of the batter and tilt the pan so it spreads into a thin, even circle. Scatter one third of the blueberries over the top. Cook 2 to 3 minutes, until the edges look set and dry and the bottom is golden when you peek with a spatula, then flip and cook 1 more minute.
  5. Cook the other twoSpray the pan lightly again and repeat with the rest of the batter and blueberries to make 3 pancakes total. If they brown too fast, turn the heat down a little, because whey batter burns quickly.
  6. Stack with cream cheesePlace one pancake on a plate and spread a thin layer of the berry cream cheese over it. Add the next pancake and repeat, saving a small scoop of cream cheese for the very top.
  7. Finish and servePut the last scoop of cream cheese in the center of the top pancake and drizzle the 1 tbsp of honey over everything. Slice it into wedges like a cake and eat it warm.
Chef's tipKeep the heat at medium-low the whole time. Protein batter browns much faster than flour batter, so a pan that is too hot gives you a burnt outside and a raw middle.
