Ingredients

  • 1 cup (80 g) rolled oats
  • 1 ripe banana
  • 2 large eggs
  • 1 scoop (30 g) protein powder
  • 1/2 cup (120 ml) milk
  • Berries for the top (optional)
  • 1 tsp baking powder, cinnamon, avocado oil spray

How to make it

  1. Prep everythingPeel the ripe banana and break it into chunks. Measure the 1 cup (80 g) of oats, 1 scoop (30 g) of protein powder, 1/2 cup (120 ml) of milk, 1 tsp of baking powder and a pinch of cinnamon. Rinse the berries and pat them dry.
  2. Blend the batterPut the oats, banana, 2 eggs, protein powder, milk, baking powder and cinnamon in a blender. Blend on high 30 to 60 seconds, until completely smooth with no oat bits. Let it sit 5 minutes so it thickens to the texture of regular pancake batter.
  3. Heat the panSet a large 12-inch (30 cm) nonstick skillet over medium-low heat for 2 minutes. Lightly coat it with avocado oil spray. A drop of water should sizzle gently, not jump and spit.
  4. Pour the pancakesPour 1/4 cup (60 ml) of batter per pancake, leaving room between them so they do not touch. Cook about 2 minutes, until bubbles pop on top and the edges look set and dry.
  5. Flip and finishSlide a thin spatula under each pancake and flip it in one quick motion. Cook 1 more minute, until the bottom is golden and the center springs back when pressed. Spray the pan again between batches.
  6. Stack and serveStack the pancakes on 2 plates and top with the berries. Eat them warm.
Chef's tipKeep the heat at medium-low. Protein powder and banana brown fast, so higher heat burns the outside before the middle cooks.
