Ingredients

  • 4 oz (114 g) 96/4 lean ground beef
  • 2 slices American cheese
  • 1 Healthy Life Keto burger bun (or any low-calorie bun)
  • 6 oz (170 g) Jesse & Ben's Beef Tallow Sea Salt Fries, 2 servings (or hand-cut potatoes)
  • 1 thin slice tomato, about 1 oz (25 g) (optional)
  • 1 thin slice onion, about 1/2 oz (15 g) (optional)
  • 1 romaine leaf, about 1/3 oz (10 g) (optional)
  • 3 dill pickle chips, about 1/3 oz (10 g) (optional)
  • 1 tbsp (15 g) ketchup
  • 1 tbsp (about 3 tsp / 15 g) yellow mustard
  • Avocado oil spray; salt and pepper

How to make it

  1. Prep everythingHeat the air fryer to 400°F (205°C). Divide the 4 oz (114 g) of beef into two 2 oz (57 g) balls, without packing them tight. Slice the tomato and onion thin, wash the romaine leaf, and set out the pickle chips, cheese slices, ketchup, mustard and bun.
  2. Air fry the friesPut the 6 oz (170 g) of fries in the air fryer basket in an even layer. Cook 12 to 15 minutes, shaking the basket halfway, until deep golden and crisp. Or bake them following the bag directions.
  3. Heat the skilletWhile the fries cook, heat a 10 to 12-inch (25 to 30 cm) cast iron skillet or griddle over high heat for about 5 minutes, until it is ripping hot and starts to smoke. Give it a light spray of avocado oil.
  4. Smash the pattiesDrop both beef balls into the pan and press each one flat and thin with a sturdy metal spatula, pushing down hard for a few seconds. Season with salt and pepper. Leave them alone for 2 minutes, until the edges are dark brown and crispy.
  5. Flip and meltScrape under each patty with the spatula and flip it. Lay a slice of cheese on each one and cook 1 more minute, then cover the pan for 30 seconds so the cheese melts all the way. Thin patties cook through fast and will be past 160°F (71°C) by now.
  6. Toast the bunMove the patties to a plate. Place the bun cut sides down in the same pan and toast about 30 seconds, until golden.
  7. Build and serveSpread ketchup and mustard on the bottom bun, then add the lettuce and pickles. Stack both patties, then the onion and tomato, and finish with the top bun. Plate it with the hot fries.
Chef's tipSmash the patty in the first 30 seconds only and never press it again. Pressing later squeezes out the juice and you lose that crispy, lacy edge.
